My Grandmother's Apple Coffee Cake
This recipe actually came from my grandmother's
friend Tiny.
1 package yellow cake mix
1 pkg instant vanilla pudding
4 eggs
1 cup dairy sour cream
1/2 cup salad oil
1/2 cup chopped walnuts
1/2 cup sugar
2 tsp ground cinnamon
2 aqpples, peeled and sliced
Combine cake mix, pudding mix, eggs, sour cream and
salad oil. Beat 5 minutes with an electric mixer. Pour half of the
batter into a greased 10 inch tube pan. Combine nuts, sugar and
cinnamon. Sprinkle half of the nut mixture over the batter, layer in
half of the sliced apples over the nuts. Cover with remaining batter and
remaining nuts and remaining apple slices. Bake in a preheated 350 degree
oven for an hour. Cool in pan for 30 minutes. This cake freezes well.
I have also made this cake in a bundt pan. Just reverse the order. Put 1/2
the cinnamon, sugar and nuts in the bottom of a well greased bundt pan,
add the apples and 1/2 the batter. Add the second layer of everything, ending
with the rest of the batter. After the cake is cooled for 30 minutes, invert it on
a cake plate. It is very pretty either way.
