Moose Stew

2 lbs boned moose meat

2 tbsp flour

1 tsp salt

1/2 tsp pepper

1/2 tsp paprika

3 tbsp butter

2 bouillon cubes

2 cups boiling water

4 peeded and quartered potatoes

6 small onions

4 peeled and quartered carrots, cut into 2 inch pieces

Cut meat into 1 inch cubes. Combine flour, salt, pepper and paprika.

Roll meat in flour ixture to coat evenly. Heat butter in a heavy saucepan.

Add meat and brown thoroughly on all sides. Dissolv bouillon cubes in

boiling water; add to meat. cover tightly and cook over very low heat

about 2-3 hours until meat is fork tender. Add vegetables and cook,

covered over medium heat for 20-30 minutes, until vegetables are tender.
