Moose Pepper Steak
2 pounds round, sirloin or flank steak
2 tsp coarsely ground black pepper
1 tsp cornstarch
1 1/2 tsp salt
1/2 cup undiluted canned beef bouillon
1/2 cup brandy
Slowly heat large, heavy skillet until very hot. Melt a little butter in the skillet.
Meanwhile, rub 1 tsp pepper into each side of the steak. Over high heat, sear steak
in the hot fat about 2 minutes on each side, or until well browned.
Reduce heat to medium; pan broil steak 8-10 minutes on each side, for medium rare.
Meanwhile, in a small saucepan, combine cornstarch and rest of the ingredients,
stirring constantly. Remove from heat. Place steak on a heated platter; keep warm.
Drain all by 2 tbsp of the drippings from the skillet. Stir in bouillon mixture;
simmer 5 minutes. Pour over steak.
