Moose Mince Meat Cupcakes
2 cups moose mince meat
1/4 cup water
1/4 cup butter
1 small (single layer) yellow cake mix
In pan heat mince meat, water and butter, stirring until blended;
cool. Spoon mixture into greased cupcake pans about 1/4 full.
Prepare cake mix as label says and spoon on top of mince meat mixture.
Fill to 2/3 to the top. Bake about 20 minutes at 375 degrees. Cool slightly
then invert pan on cake rack. Shake gently and lift pan. Finish cooling.
At the time of serving, combine in a saucepan:
3/4 cup sugar
1/2 cup butter
1/2 cup light cream
3 tbsp rum
dash nutmeg
Cook over low heat, stirring constantly until butter melts. Put cupcakes on a large
shallow serving dish and spoon rum sauce over top. Serve at one while sauce is hot.
Mix first ingredients thoroughly. Cut in butter until mixture is crumbly.
Divide in 2 parts; press half of mixture into bottom of greased 9x13 inch
baking pan. Cover with mince meat, then firmly press remaining mixture on top.
Bake 40 minutes in 350 degree oven. Cool; cut into bars.
