Moose Mince Meat

6 lbs chopped moose, venison, caribou, etc

1 lb chopped suet

6 lbs chopped apples

3 lbs raisins

2 lbs currants

3 lb brown sugar

1/2 gallon sweet cider

1 tsp salt

1 lb sliced citron

3 candied lemon peel

1 lemon, juice and grated rind

1 orange, juice and grated rind

1 Tbsp each of cloves, allspice, cinnamon

1 tsp nutmeg

Boil cider and sugar to a syrup; add other ingredients and

cook slowly for 2 hours. Place in containers and either can or freeze.
