Molasses Raisin Zucchini Bread
1/2 cup molasses
1 cup chopped walnuts
1 cup raisins
4 eggs
1 cup white sugar
1 cup brown sugar
1 cup vegetable oil
3 1/2 cups all purpose flour
1 1/2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
3/4 tsp baking powder
2 cups shredded zucchini
1 tsp vanilla
Beat eggs. Gradually add sugars and oil. Combine dry ingredients and
add alternately with grated zucchini. Stir in raisins, walnuts and vanilla.
Turn into 2 greased loaf pans. Bake in a 350 degree oven for 55-60 minutes.
Makes 2 loaves.
