Mediterranean Burgers

 

6 tbsp dried apricots, diced

2 tbsp dried tomatoes, diced

2 tbsp dried peppers, diced

2 tbsp pinenut kernals (pignolia nuts)

Combine all ingredients with meat and mix well.

Form into 1/3 pound patties

Cook on a grill or frying pan for 1 1/2 minutes on each side over medium high heat.

Makes 4 burgers
