Macaroni and Cheese Casserole

2 tbsp unsalted butter, cut up

4 eggs

2 tbsp chopped parsley

1/2 tsp salt

12 oz hot cooked macaroni

2 cups shredded cheddar cheese

8 oz diced ham, optional

3 tbsp bread crumbs

2 tbsp grated parmesan cheese

Heat oven to 350 degrees. Coat 8 one cup ramekin with non

stick cooking spray or use a 3 qt casserole dish. Lightly beat

eggs in a large bowl. Add milk, parsley, salt and pepper. Stir

in macaroni, cheese and diced ham, if using, and toss to combine.

Divide evenly among prepared ramekins or casserole dish. Sprinkle

top with an even layer of bread crumbs. Sprinkle with Parmesan.

Dot with butter. Bake at 350 degrees for 20-30 minutes, if using

ramekin and 40 minutes for the casserole dish. Let cool 10

minutes before serving.
