Low Fat Mashed Potato Casserole

 

6 large baking potatoes, peeled and cut into chunks

1 Tsp garlic powder

1 cup warm skim milk

1/2 cup non fat sour cream

1 tablespoon butter substitute

2 Tsp prepared horseradish

black pepper to taste

1 cup reduced fat cheddar cheese

Cook potatoes until tender, approximately 20 minutes. Preheat oven to 375 degrees. Drain the potatoes and return to pan. Mash potatoes.

Add the garlic powder to the skim milk then add slowly. Place back on the stove and stir to reheat. Stir in horse radish, sour crean and butter

substitute. Season with black pepper. Place the potato mixture in a 13 x 9 inch baking pan and spread evenly. Sprinkle with the cheddar cheese.

Bake for 15 minutes or until cheese melts over the top.
