Low Fat Chicken Primavera over Penne

 

1 lb pkg Penne Rigate, cooked as package
directs and drained

1 lb skinless, boneless chicken cut into
strips, seasoned with salt and pepper

3 cloves garlic, chopped

6 cups fresh, chopped or sliced vegetables
(red, yellow peppers, mushrooms, onion, carrots
brocolli flowerets, yellor or green squash)

3/4 cup chicken broth

Vegetable cooking spray

Spray large skillet generously with cooking spray. Oven medium heat, cook chicken and garlic until chicken

is no longer pink. Add vegetables. Cook and stir until crisp tender, about 5 minutes. Stir in Penne Rigate and

chicken broth. Heat through and serve immediately.
