Lobster Thermidor

2 ( 1 1/2 lb) lobsters

1 cup sliced fresh mushrooms

1/4 cup chopped onion

3 tbsp butter, melted

3 tbsp flour

1 1/4 cup half and half

1 tsp Dijon mustard

1/4 tsp salt

Dash of red pepper flakes

1/3 cup grated Parmesan Cheese

1/2 tsp paprika

Steam lobsters in 1 inch of boiling salted water in a large

kettle or Dutch oven 8-10 minutes. Remove from pot,

reserving 1/4 cup liquid; cool.

Remove meat from lobster shell, tail, and claws, and coarsely

chop. Set aside. Preheat oven to 400 degrees. Meanwhile, saute

mushrooms and onions in butter in large skillet until tender. Add

flour, stirring until smooth. Cook 1 minute, stirring constantly, until

mixture is thickened and bubbly. Stir in mustard, salt, pepper and reserved

lobster meat. Spoon into 6 ( 6 oz ) well greased oven proof baking dishes

or shells; sprinkle each with Parmesan cheese and paprika. Bake for 10

minutes or until lightly browned. Serves 6

This is an extremely low carb main meal selection.
