Lite Mozzarella, Tomato and Avocado Salad

1/2 cup olive oil

2 tbsp white wine vinegar

1 small garlic clove, minced

1/2 tsp salt

1/8 tsp ground black pepper

1/2 cup finely chopped basil

One 12 oz pkg lite mozzarella,
cut into 1/4 inch slices

2 medium ripe tomatoes, sliced 1/4 in thick

1 small ripe avocado, peeled and sliced
1/4 inch thick

1/2 small red onion, thinly sliced and
separated into rings.

In small bowl, whisk together olive oil, vinegar, garlic

salt and pepper. Stir in basil. On large serving platter

alternate slices of mozzarella, tomato, and avocado. Top

with onion rings. Just before serving, drizzle on dressing.

Makes 6 servings
