Lemony Brussels Sprouts

 

1 lb fresh Brussels sprouts, trimmed

2 tsp olive oil

1/2 small onion, halved and thinly sliced

1 tsp grated lemon peel

2 tsp fresh lemon juice

1/4 tsp pepper

1/8 tsp salt, optional

Trim outer leaves from the Brussels Sprouts. With a sharp knife, cut a small "x" in the stems; set aside.

combine oil and onion in a microwave safe 1 quart casserole; toss to coat onions. Microwave, covered 1 minute. Add Brussels sprouts and 3 tbsp water.

Cover and microwave on HIGH 6-9 minutes or until Brussels sprouts are crisp tender, stirring once.

Add lemon peel, lemon juice, pepper and salt if desired. Toss to coat.
