Larded Grouse

4 (1lb) grouse

Thinly sliced bacon

Melted butter

Flour

Salt and pepper to taste

Preheat oven to 400 degrees. On each grouse arrange bacon until bird

is completely covered. Tie with string to keep bacon in place. Put birds in

roasting pan. Pour sufficient water over them to provide for basting.

Roast in preheated oven for 25 minutes. discard bacon. Brush birds with

butter. Sprinkle with flour, salt and pepper. Roast for 15 minutes longer,

or until birds are a rich golden brown.
