Lamb Shish Kebab

Mushroom caps and eggplant cubes can be used
when making kebabs.

1/2 cup lemon juice

1/2 cup olive oil

1/4 cup grated onion

1 tsp salt

1/4 tsp pepper

1/2 tsp rosemary

2 lb leg of lamb, boned and cut into 1 1/2 inch cubes

2 medium green peppers, cut into 2 inch squares

8 small white onions, parboiled

2 medium tomatoes, quartered

Fluffy cooked rice

Prepare marinade: In small bowl blend lemon juice, oil, grated onion,

salt, pepper and rosemary. Prepare Kebabs: On 4 large skewers alternate

lamb, green peppers and white onions. Arrange skewers flat in shallow

roasting pan; pour marinade over them. Marinate for 2-3 hours, turning occasionally.

Preheat broiler. Arrange kebabs on broiler pan; reserve marinade.

Broil 4-5 inches from heat for about 12 minutes, brushing occasionally with

marinade. Turn kebabs; broil for 7 minutes. Arrange tomatoes on ends of skewers;
