Lamb Moussaka

1 medium eggplant

1/2 cup vegetable oil

4 tbsp butter

4 medium onions, sliced

3 cloves garlic, crushed

1 lb ground lamb

3/4 tsp salt

1/2 tsp thyme

1/2 tsp oregano

1/2 cup canned tomatoes

1/2 cup dry white wine

2 eggs, seperated

1 cup fresh bread crumbs

2 tbsp flour

1 1/2 cups milk

1/8 tsp nutmeg

Preheat oven to 350 degrees. Grease a 3 quart casserole. Wash eggplant. Do not peel; cut into lengthwise slices. Heat
