Jack O'Lantern Cookies
A New Halloween Favorite
I just tried this new recipe and it's delicious.
The Gjetost cheese is from Norway and is available
in most larger supermarkets. It is wonderful!
1 cup butter or margarine, softened1/2 cup firmly packed brown sugar
2 eggs
1 tsp vanilla extract
1 1/3 cups unsifted all purpose flour
1 tsp baking soda
1 1/2 cup old fashioned or quick oatmeal
6 oz dried fruit bits
1 1/2 cups Gjetost cheese, cut into 1/4 inch cubes
1 cup chopped walnuts
2 cups confectioners' sugar
2-3 tbsp milk
Green and Orange food coloring
With an electric mixer, cream butter and sugars until light and fluffy.
Blend in eggs and vanilla. Combine flour and baking soda, and stir
into batter. Blend in oats, fruit, cheese and walnuts. With a tablespoon
as a measure, shape into balls and place on baking sheet 2 inches
apart. Press down lightly with bottom of drinking glass.
Bake at 375 degrees for 10 minutes or until golden brown.
Transfer to a cooling rack. In a bowl, blend confectioners' sugar with
enough milk to make a thick frosting. Color one half
green, the other orange. Use to decorate cookies with Jack O'Lantern
faces. Makes about 54 cookies.
Note: These cookies can be made healthier by substituting SPLENDA
brand sugar substitute for regular brown and granulated sugars.
Low fat or non fat butter substitutes can be used instead of regular
butter or margarine.
