Impossible Zucchini Tomato Pie

2 cups chopped zucchini

1 cup chopped tomato

1/2 cup chopped onion

1/3 cup grated Parmesan cheese

1 1/2 cups milk

3/4 cup Bisquick

3 eggs

1/2 tsp salt

1/4 tsp peppered

Heat oven to 400 degrees. Grease quiche dish (10 inch) or 10 inch

pie plate. Sprinkle first 4 ingredients into pan. Beat remaining

ingredients until smooth. Pour into pan. Bake until knife inserted in

center comes out clean, about 30 minutes. Cool 5 minutes. Makes

6 servings.
