How to cook rice
One cup of rice makes about 3 1/2-4 cups cooked rice.
Rice can be cooked ahead of
time and kept hot and moist, for a
considerable time by putting it in a sieve
or colander over a saucepan of
steaming water. The sieve or colander should
be covered with a clean
kitchen towel to keep the rice on top from drying out.
Don't
peek when boiling rice; this lets out steam and cools the rice.
Don't stir
after rice comes to a boil; this makes a mush or the rice.
Don't leave rice
in the cooking pan more than 10 minutes after it is done.
This caused sticky
rice.
1 cup rice
1 tsp salt
2 cups water
Combine all ingredients in a 3 quart saucepan with a tight fitting lid. Bring
to a boil; stirring only once as water comes to a boil. Lower heat to simmer; cover
and cook for 15-20 minutes, removing the lid.
For drier rice: After cooking,
fluff rice lightly with a fork; let stand in covered pan
for 5-10 minutes to
steam dry.
