Hot Potato Salad
8 slices bacon, diced
1/2 cup chopped onion
4 cups cubed, cooked potatoes
2/3 cup water
1/4 cup vinegar
2 Tbsp sugar
1 tbsp flour
1 1/2 tsp salt
1/2 tsp dry mustard
1/2 tsp celery seed
Fry bacon and save grease. Saute onion in bacon grease. Mix together water,
vinegar, sugar, flour, salt, dry mustard and celery seed. Add to onion and grease.
Cook until thick. Pour over potatoes in a casserole dish. Break up bacon
and mix into potatoes. Bake at 350 for 30 minutes.
