Hot Cross Buns

8 cups all purpose flour

2 packages yeast

1 tsp salt

2/3 cup sugar

2 tsp cinnamon

1/4 tsp cardamon

2 cups warmed milk

1/2 cup butter, melted

4 eggs

1 cup raisins

1/4 cup diced citron

Lemon Glaze:

Confectioners' sugar

Lemon juice

Combine yeast with warm milk, 2 cups flour, sugar, melted butter,

salt, spices. Combine well then add eggs. Beat the eggs in until well mixed.

Gradually add remaining flour. Mix in fruit. Turn out onboard and knead until

satiny. Cover, let rise until doubled in size. Punch down. Roll out.

Cut off 2 ounce balls and shape. Place them in an oiled pan. Let rise until

doubled. Bake at 350 degrees for 15-20 minutes. Cool. Glaze with a blend of

confectioners sugar and lemon juice. Make a cross on each bun. Makes 2-3 dozen,

depending on size.
