Homemade Mincemeat
1 pound diced, cooked pork
1/2 pound diced, cooked veal
10 medium tart apples, cored
2 cups seedless raisins
2 cups currants
1 cup cooked cranberries
2 cups sugar
1 cup sweet apple cider
1 tbsp each cinnamon, ground cloves and nutmeg
1 cup beef broth
2 tbsp vinegar
Put port, veal and apples through medium blade of a meat grinder or chop
coarsely with a food processor. Turn into a large pot; add remaining ingredients
and mix well. Bring to a boil, stirring frequently. Pour into hot sterilized jars; seal at once.
