Healthy Vegetarian Spaghetti

 

3 tbsp extra virgin olive oil

1 large yellow onion, chopped

1 bunch of scallions, chopped

5 stalks celery, chopped

3 garlic cloves, minced

6 large, ripe red tomatoes,
cut into large chunks

1/2 cup fresh basil leaves, finely chopped

1/8 tsp cayanne pepper

1 lb whole wheat spaghetti

8 ox crumbled feta cheese

In a large pan, heat oil until sizzling,. Reduce heat to low-medium,

and saute onion, scllions, celery and garlic in oil for 10 minutes, or

until onions are transparent. Add tomatoes, basil and cayenne. Cook 15 minutes

or until tomatoes are soft. Cook spaghetti al dente per package directions.

Place spaghetti on serving platter; top with vegetables and feta cheese.

Serves 2-3-people.
