Harvest Minestrone
1 tbsp olive oil
1 cup chopped onion
2 cloves garlic, minced
3 carrots, diced
2 ribs celery, diced
4 cups reduced sodium chicken broth
1 (28 oz) can crushed tomatoes
1 tsp Italian seasoning
2 potatoes, peeled and diced (about 12 ounces)
1 (15 oz ) can kidney beans, drained and rinsed
1 cup cut green beans
2 cups ditalini or small pasta
Heat oil over medium heat in a large stockpot.
Add onion, carrots and celery. Cook stirring occasionally, about 5 minutes or until onions are translucent, Add garlic and cook for about 1 minute.
Add chicken broth, crushed tomatoes and Italian seasoning, stir to combine. Bring to boiling.
Add potatoes, kidney beans and green beans. Reduce heat to medium low. Cover and cook 20 minutes or until potatoes are tender, stirring occasionally. Stir in pasta; cook until heated through.
