Ground Lamb Kefta

 

1 pound ground, lean lamb

1 medium onion, finely chopped

2 tbsp fresh mint, chopped

2 tsp cayenne pepper

1 tsp ginger, ground

1 tsp allspice, ground

1/2 tsp cumin, ground

1/2 tsp cinnamon

1/2 tsp salt

6 pita breads

Yogurt

Lettuce

Tomatoes

Rice (optional

Combine all ingredients, except the ones in italics. Cover and refrigerate the lamb, onion and spices overnight. Shape into 1 1/2 inch meat balls. Thread them on six skewers. Grill or 3 minutes per side. Or, broil meatballs in oven for 2 minutes a side. Serve in pita breads with yogurt, lettuce and tomatoes or over rice.

If using wooden skewers, soak them in water for 20 minutes first.
