Grilled Tuna Toasts
1 1/2 lb tuna fillets
1/2 cup fresh lemon juice, divided
2 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp freshly ground pepper
1/2 cup mayonnaise
1 cup chopped cucumber
2 tbsp chopped green olives
1 tbsp chopped fresh dill
1 (12oz) French bread baguette, thinly sliced and toasted
1/3 cup shredded Swiss cheese
Brush tuna with 1/4 cup lemon juice and olive oil; season with
salt and pepper. Cover and refrigerate 1 hours. Coat grill rack with
nonstick cooking spray. Preheat grill to medium high heat. Grill
tuna, covered with grill lid, 6-8 minutes on each side or until fish flakes
when tested with a fork. Let cool; chop tuna.
Preheat broiler. Combine tuna, mayonnaise, cucumber, olives, dill, and
remaining 1/4 cup lemon juice in a large bowl and spoon over toasted bread
slices. Top with cheese, if desired. Broil bread slices 1-2 minutes or until
bread is brown and cheese is melted. Serves 4
