Green Pepper Relish

24 medium green peppers, cored and seeded

12 medium onions

3 cups sugar

3 cups vinegar

2 tbsp salt

2 tbsp celery seed

2 tbsp mustard seed

1 tbsp crushed red pepper flakes

4 oz can pimientos, drained and diced

Chop green peppers and onion in a food processor. Place in a

colander. Pour boiling water over vegetables; drain; repeat with more boiling

water. Turn vegetables into a large pot; add remaining ingredients. Bring to

a boil; cook over very low heat for 40 minutes, stirring occasionally.

Pour into hot sterilized jars and seal at once.
