Green Beans with Lime

 

1 pound fresh green beans, cut in 2 inch pieces (4 cups)

1 tbsp olive oil

1 lime

 

In a large skillet cook green beans in hot oil over medium heat for 18-20 minutes,

until crisp-tender and lightly browned, using a spatula to gently lift beans occasionally

to prevent them from sticking.

Meanwhile, shred 1 tsp of lime peel. Cut lime in half. Add lime peel to beans.

Cook and stir for 1 minute more.

Lightly season beans with salt, drizzle with lime juice and serve immediately.
