Green Beans with Bacon and Almonds
4 slices bacon, cut into small pieces
1/2 cup chopped onion
1 clove garlic, minced
2 1/2 cups green beans, drained
1/4 cup chopped red bell pepper
1/4 tsp kosher salt
1/4 tsp thyme leaves
1/4 tsp ground black pepper
1/2 cup slivered almonds, toasted
In a medium skillet cook bacon pieces until crisp. Using slotted spoon, remove bacon from skillet, reserving drippings. Drain on paper towels.
Cook onion in hot drippings in skillet until tender. Add green beans, bell pepper, salt, thyme and ground black pepper. Cook over low heat about 10 minutes or until heated through. Stir in almonds. Sprinkle with bacon.
This is a very low carb dish.
