Grapenut Pudding
4 Eggs slightly beaten
2/3 cup sugar
1/8 tsp salt
4 cups milk (scalded)
(to scald milk, put the milk in a saucepan and
warm it up just until you see bubbles forming
on the edge of the pan)
1 tsp vanilla extract
2/3 cup grapenut cereal
Combine eggs, salt and milk. Gradually mix thoroughly. Then add vanilla and grapenuts.
Bake in pan of hot water in a slow oven. Bake at 325 degrees for 40-45 minutes.
It is done when a knife inserted in the middle comes out clean.
Note: reduce the sugar in this recipe by substituting Splenda brand sugar substitute cup for cup.
You can also reduce the fat by using low fat milk.
