Golden French Fries
2 pounds Yukon Gold potatoes, peeled and cut
into 1/2 inch cubes
3/4 tsp salt plus more for cooking water
2 pounds sweet potatoes, peeled and cut
into 1/2 inch cubes
3 tbsp butter
1 large onion, coarsely chopped
2 cloves garlic, finely chopped
1/2 tsp ground black pepper
Place Yukon Gold potatoes in a 4 quart saucepan and
cover with salted water by 3 inches. Bring to a boil over high
heat; cook 2 minutes. Carefully add sweet potatoes and bring to
a boil. Cook until potatoes are fork tender and still firm 10-12
minutes. Drain and place on large baking sheet in a single layer
to cool. In a large skillet, melt butter over medium heat. Add onion
and cook until translucent, 5-7 minutes. Add garlic and cook 1 minute
more. Add reserved potatoes, 3/4 tsp salt, and the black pepper to
skillet. Cook, stirring occasionally, until browned and cooked through
15-20 minutes. Serve immediately.
