New Gingerbread Christmas Cake
1 package butter yellow cake mix
1/2 cup butter softened
3 large eggs
2/3 cups water
1/2 tbsp ground allspice
1/2 tbsp ground clove
1/2 tbsp ground ginger
1/2 tbsp ground corriander
1 tbsp ground cinnamon
1/4 tbsp rum flavoring
3/4 cup shredded coconut
1/2 cup chopped walnuts
Heat oven to 375 degrees. Grease and flour 2 8" pans. Mix all ingredients
except for coconut and nuts. Blend at low speed until moistened. Mix at
medium speed for 4 minutes. Pour into pans. Bake for 30-35 minutes. Cool on racks.
BUTTER ICING
8 Tbsp unsalted butter
3 cups confectioners' sugar
1 tbsp warm milk
1 tbsp vanilla
Blend butter and milk. Gradually add confectioner's sugar. Mix a medium speed until icing is smooth.
Add vanillaa extract. Decorate with holly and berries cut from marzipan colored with red and green food
coloring and dusted with superfine sugar.
