Fresh Lime Salsa

 

1 cup diced peeled jicama

1 navel orange, peeled, sectioned and coarsely chopped

1/4 cup finely chopped red bell pepper

1 green onion, thinly sliced

2 tsp grated lime peel

2 tbsp fresh lime juice

2 tsp vegetable oil

1 tsp sugar

Combine jicama, orange, bell pepper, onion, lime peel, lime juice, vegetable oil, sugar and salt to taste, in medium bowl.

Cover and chill at least one hour to blend flavors

Stir before serving with grilled chicken, pork or fish.
