French Chocolate Cake
CAKE
4 eggs
3/4 cup granulated sugar
6 tbsp all purpose flour
3 tbsp cornstarch
1 tsp baking powder
CHOCOLATE FILLING
3/4 cup butter
1 1/2 cups powdered sugar
3 egg yolks
5 tbsp unsweetened cocoa powder
4 tbsp orange marmalade, optional
GLAZE AND GARNISH
3 Tbsp butter
6 oz semi sweet chocolate chips
Green Grapes
Candied flowers, optional for garnish
In a bowl, beat eggs and sugar until light and fluffy. In another bowl, combine
flour, cornstarch and baking powder. Sift into egg mixture. Stir to blend.
Line a 9" round cake pan with greased waxed paper. Do not grease sides of pan.
Pour batter into pan. Bake at 375 degrees for about 30 minutes. Let cake cool in
pan. Loosen around edges with a knife. Carefully turn cake out into rack. Peel off
paper. For FILLING, beat together butter and sugar until creamy. Add egg yolks, cocoa
and orange marmalade, if used. Stir until smooth. Cut cake into three layers. Spread
chocolate filling between cake layers. For GLAZE, melt butter and chocolate in a
double boiler. Spread mixture on top and sides of cake. Garnish with seeded grapes,
whole or halves, and candied flowers, if used. Chill cake for a few hours, before serving.
