Festive Rice
2 cans low sodium chicken broth
1 cup converted long grain rice
4 tbsp butter
1 1/2 can small broccoli florets
2/3 cups cross cut carrot slices
1 1/2 cup julienne cut red bell peppers
3 tbsp minced fresh parsley
In a medium nonstick saucepan, bring broth to a boil. Add
rice. Reduce heat to medium low; cover and simmer 10 minutes.
Stir in butter and all of the vegetables. Cover; continue cooking
10 minutes. Remove from heat and let stand 5 minutes or until water
is absorbed. Dot with parsley and additional butter if desired. Fluff with
fork and serve. Makes 8 servings.
