Ekonk Stuffed Quahogs
1 dozen quahogs, steamed in water to open
save water
1 cup bread crumbs
1 tsp oregano
1 tsp garlic powder
2 eggs
1/2 green pepper, chopped
6 stalks celery, chopped
3 small onions, chopped
1/2 tsp salt
1/2 tsp pepper
1/2 tsp Tabasco sauce
Grind quahogs, pepper, celery and onion into a large bowl.
Add bread crumbs, mixing well. Beat eggs lightly and add to rest
of ingredients and mix well. Add juice from steam pan as needed.
Clean shells and stuff each one. Bake at 350 degrees for 20 minutes.
