Eggplant Rollatini
2 eggplants, sliced thinly, lengthwise
Olive Oil
Ricotta cheese
Basil, oregano, marjoram, salt
Marinara sauce
Shredded mozzarella cheese
Place eggplant slices on a cookie sheet and cover with olive oil. Sprinkle
with your favorite seasonings. Bake at 350 degrees for 30 minutes. Turning
once after 20 minutes. Remove the eggplant from the oven. Place a small
of ricotta cheese on each slice and roll up each slice. Place in 9' x 11" baking pan.
Cover with marinara sauce and shredded mozzarella cheese. Bake for an additional
30 minutes.
