Easy Overnight Strawberry Jam

2 quarts large ripe strawberries

6 cups sugar

2 tbsp lemon juice

Day before, wash and hull strawberries. Cover with boiling water; let stand for 2

minutes. Drain well; put in a large pot. Stir in 4 cups of the sugar and lemon

juice. Bring to a boil, stirring occsionally. Boil hard for 2 minutes.

Remove from heat; when bubbling stops, stir in remaining sugar. Return to

heat; bring back to a boil. Boil rapidly for 5 minutes longer. Remove from heat;

skim carefully. Pour berries onto baking sheets or into shallow baking pans,

with berries not more than 1/2 inch deep. Let stand overnight. Next day, scrape

berries from sheets or pans. Pour into hot sterilized jars; seal at once.
