Duck with Orange Stuffing
Cleaned and dressed ducks
Vegetable oil
3 cups fresh bread crumbs
1 cup cornbread crumbs
1 cup diced orange sections
2 tsp grated orange rind
5 tbsp butter
1/2 cup chopped onion
1/2 cup chopped celery
1/4 tsp pepper
1 tsp each sage and marjoram
1/2 cup raisins
To prepare stuffing, melt butter in a large saucepan; saute onion and
celery. Add oranges, raisins and seasonings. Stir in bread crumbs and
cornbread crumb. Mix well, until all is moistened.
Fill duck cavities with the stuffing and place in a shallow baking pan on a
rack. Bake in a 450 degree oven for about 1/2 hour, or until pink juice
oozes out. If you prefer duck well done, cook for an additonal 1/2 hour
at a reduced heat of 350 degrees.
