Dilled Onion Rings
For medium onions, sliced
1 gallon water
1 cup salt
2 tablespoons powdered alum
1 cup white vinegar
12 peppercorns
1 teaspoon dill seed
1 clove garlic
Day or two before, so onions into quarts of the water with salt, for one hour.
Drain; rinse. Soak onions in remaining water with a alum for two to three hours.
Drain; rinse thoroughly. Pack onions into quart jars; add remaining ingredients.
Pour into hot sterilized jars; seal at once.
