Deer Chops with Sour Cream

6 deer chops, 1 inch thick

1 can beef broth

1/2 tsp thyme

1/2 cup chopped celery

1/2 cup chopped green onions and tops

1/2 cup sliced fresh mushrooms

3 tbsp flour

1 tbsp parsley flakes

1 cup dairy sour cream

Brown chip in hot oil; season with salt and pepper.

Drain off excess fat; add next 4 ingredients. Simmer

covered until meat is done, about 30 minutes. Put chips

to one side of pan. Thicken liquid in pan as you would roast

type of gravy. Add mushrooms and parsley. Top chops with

sour cream; cover, and heat about 5 minutes.
