Curried Seafood Salad
1 cup cooked shrimp
1 cup flaked crabmeat
1/2 cup mayonnaise
2 tbsp lemon juice
1 tsp curry powder
1/2 cup chopped celery
1/2 cup sliced ripe or stuffed olives
3 cups cold cooked rice
2 tbsp French dressing
1/2 cup snipped parsley
Just before serving, blend mayonnaise, lemon juice and curry. Add celery
and 1/4 cup olives to shrimp crab mixture; pour curried mayonnaise over all,
and toss. Toss rice with French dressing and parsley. Spoon it onto serving platter;
heap seafood mixture on top. Sprinkle with the rest of olives. Serve immediately.
