Crisp Pea Salad

 

1 lb fresh peas, shelled ( 2 cups )

1 (8oz) pkg. finely chopped cheddar cheese

1/2 cup chopped celery

1/2 cup shredded iceberg lettuce

1/4 cup chopped green bell pepper

1/3 to 1/2 cup mayonnaise

1 tbsp raspberry vinaigrette

1/2 tsp italian seasoning

1/4 tsp ground black pepper

2 tbsp bacon bits

In a large bowl combine peas, cheese, celery, lettuce and green bell pepper. Toss lightly until combined. Add mayonnaise and raspberry vinaigrette, italian seasoning and black pepper. Lightly toss until coated. Cover and refrigerate 4 to 24 hours.

Just before serving, stir in bacon bits.
