Corn Relish
9 ears of corn
1 medium cabbage, shredded
2 medium green peppers, chopped
2 medium onion, chopped
1/4 cup salt
1 cup sugar
2 quarts vinegar
2 tbsp prepared mustard
1 tbsp flour
1 tbsp celery seed
Cut corn from cob; put in large pot. Add cabbage, green peppers, onions, salt, sugar
and vinegar. Bring to a boil; then simmer for 30 minutes. In a small bowl, blend mustard
and flour; stir into vegetable mixture. Add celery seed; simmer for 5 minutes, stirring
frequently. Pour into hot sterilized jars and seal at once.
