Classic Pesto

8 cups basil (2 1/2 oz)

1/3 - 1/2 cup olive oil

1/2 cup pine nuts

1/2 cup grated Parmesan or Romano cheese

1/4 tsp salt

Ground black pepper

In a food processor or blender, combine basil, 1/3 cup of the olive oil,

the nuts, cheese, garlic and salt. Cover and process until nearly

smooth. Add oil as necessary to make the right consistency.

Makes about 3/4 cup
