Clam Sauce for Spaghetti

1/3 cup olive oil

3/4 cup finely chopped onion

3 (10 oz) cans minced clams or an equal amount
of chopped fresh clams

1 tsp pepper

2 cloves garlic, finely minced

1/4 cup chopped parsley

Heat oil in heavy saucepan over low heat. Add onion and cook

until soft but not brown. Drain clams and add liquid to onion.

Cover and simmer over very low heat for 20 minutes. Add clams,

pepper, garlic and parsley; cook uncovered over medium heat

for 10 minutes. Makes 4 cups sauce
