Clafouti

 

3 cups blueberries, rinsed

2 tbsp candied ginger, chopped

1/4 cup plus 1 tbsp sugar

1 cup lowfat or nonfat milk

3 eggs

1/2 cup flour

2 tsp vanilla extract

block of dark or bittersweet chocolate, shaved

Preheat oven to 325 degrees. Butter a deep 10 inch pie plate or shallow baking pan.

Arrange blueberries and ginger in the bottom of the pie plate and sprinkle with the 1/4 cup sugar.

Pour milk into a blender and add eggs flour, vanilla and remaining sugar. Blend on high until

minced, 1 minute. Pour batter directly from blender over the fruit in the pie plate. Bake for 25-30

minutes or until clafouti is slightly browned on the edges. Top with shaved chocolate. Cut into 6

pie shaped wedges and serve warm.
