Cinnamon Raisin Muffins
1 1/4 cups flour
1/2 cup quick or instant Cream of Wheat cereal
1/2 cup sugar
1 Tbsp baking powder
2 tsp ground cinnamon
1 cup milk
1 egg, lightly beaten
1 tbsp melted butter
1 tsp vanilla
1 cup raisins
2 tbsp apple juice
In a medium bowl, combine flour, cereal, 1/4 cup sugar, baking powder
and cinnamon; set aside. In a small bowl combine milk, egg, butter and
vanilla. Stir into dry ingredients just until moistened. Stir in raisins. Spoon mixture
evenly into 12 greased muffin pans. Bake at 400 degrees for 18-20 minutes or
until toothpick inserted into the middle of one, comes out clean. Remove from
pan; brush tops with fruit juice and roll in remaining sugar. Serve warm.
