Cinnamon Carrot Pie

 

2 cups cooked, mashed carrots

1 (12 oz) can evaporated milk

2 eggs

1 cups sugar

1/2 tsp salt

1/4 tsp ginger

2 tsp cinnamon

1 unbaked pie crust

Preheat oven to 400 degrees. In a large bowl, beat together eggs, milk, carrots, sugar, salt, ginger and cinnamon. Beat for 2 minutes

Pour into unbaked pie crust

Bake for 15 minutes and then lower heat to 350 degrees. Bake for an additional 45 minutes or until filling is set..
