Christmas Spirals

 

1/2 pkg (17.3 oz) frozen puff pastry sheets (1 sheet) thawed

1 tbsp prepared pesto

3/4 cup shredded mozzarella cheese

1 pkg (10 oz) frozen chopped spinach, thawed, squeezed dry

1 tbsp grated Parmesan cheese

Heat oven to 400 degrees. Prepare a cookie sheet with nonstick foil.

Unfold pastry like a book on lightly floured surface. Spread pesto over pastry, leaving 1 inch

border at top. Top with mozzarella, spinach and Parmesan cheese. Press slightly into pastry.

Brush plain border with a little water. Starting from the opposite edge, roll up like a jelly roll;

press to seal border.

Cut into 1/2 in slices; place cut side down on lined baking sheet. Bake 15 minutes or until

golden brown and puffed. Serve warm or at room temperature.

 

This is a make ahead recipe. place unbaked slices on foil lined baking sheet and freeze. When

frozen, store in ziptop freezer bag up to one month. Bake as above, adding 2-3 minutes to

baking time, until golden brown.
